Published on 6 October 2015
Tomato, cucumber, carrot, and beet salads… Mixed salads or pasta salads. In the summer, we crave something fresh! And the garden, overflowing with sun-kissed vegetables, reinforces that desire… Why not mix things up a little? Why not swap out your usual oil-and-vinegar dressing for one of the chicory-based dressing variations? Whether classic or tangy, there’s something for every taste!
For the white wine vinegar and chicory dressing:
– 2 tablespoons of white wine vinegar
– 4 tablespoons of olive oil
– 1 teaspoon of whole-grain mustard
– 2 tablespoons of Leroux liquid chicory
– Salt, pepper
For the classic chicory vinaigrette:
– 1 tablespoon of vinegar
– 3 tablespoons of sunflower oil
– 1 teaspoon of mustard
– ½ tablespoon of liquid chicory
For the tangy chicory vinaigrette:
– 1 tablespoon of lemon juice
– 1 tablespoon of vinegar
– 3 tablespoons of sunflower oil
– 1 teaspoon of mustard
– ½ tablespoon of liquid chicory
Mix things up depending on your salads, your mood, and your tastes—now it’s your turn to get creative! Find some great summer recipes in our recipes section.
