1.chicory chocolate chip cookies
Prepare in advance. 15 minutes preparation time for 10 to 15 minutes maximum baking time. Ingredients: for 8 to 12 cookies, depending on size, you’ll need :
– 250 g flour
– 1 sachet yeast
– 125 g caster sugar
– 125 g butter
– 1 egg
– 1 teaspoon liquid chicory
– 250 g chocolate chips (milk or dark chocolate)
– 2 teaspoons honey
To prepare: melt the butter in a bain-marie. Mix the butter and egg, then add the sugar, honey, flour and baking powder. Mix well. Finally, add the chocolate chips. Form 4-5 cm-diameter balls between your fingers, and flatten them on a baking sheet lined with parchment paper. Bake at 180°C for 10 to 15 minutes max.
2. Vegan red fruit sorbet
Prepare (and enjoy) at the last minute: 5 minutes preparation max. All you need is a blender. For the ingredients, you’ll need :
– 100 g frozen red fruit (per person approx.)
– 1 tablespoon powdered sugar
– 2 to 3 tablespoons coconut milk
Place the ingredients in the bowl of your blender and… blend. It couldn’t be easier! The little extra trick? You can make this sorbet with the fruits of your choice: raspberries, blackberries, cherries, bananas, or mix several together. In the same way, you can use bags of frozen fruit, or freeze some fresh (at least 24 hours in advance).
3. Seasonal smoothie
To be prepared at the last minute. Preparation time: 5 minutes max. Once again, all you need is a blender.
Our recipe for one person? Blend ½ kiwi, ½ banana, orange segments, 1 tablespoon maple syrup. Add coconut milk if necessary. Enjoy in a tall glass with a few ice cubes.
Don’t like this recipe? No worries. All you need to make a good smoothie is :
– one or more fruits: banana, peach, apricot, apple, avocado…
If the chosen fruit is not creamy (like banana or avocado, for example), add a creamier ingredient: plant milk, yoghurt or coconut milk.
– A zest of tangy fruit such as lemon, kiwi, raspberry…
– A sweetener: honey, maple or agave syrup, another berry or dried fruit
– A little water and/or ice cubes if the result is not as liquid as you’d like
– Any other element that finds its place in your gourmet smoothie: spinach leaves or kale, ginger, chia seeds…
After all, the main ingredient in this recipe is your creativity.
4. Energy balls with dried fruit
Prepare in 5 minutes for 6 to 8 energy balls. For the ingredients, you need
– a handful of pitted dates
– a handful of mixed nuts (cashews, hazelnuts, etc.)
– a few dried apricots or other dried fruits (raisins, figs, cranberries)
– grated coconut
Blend your dried fruit and nuts. Take a small handful and shape into balls by hand. Roll in the shredded coconut. Enjoy with your fingertips. Energy balls are small snacks made mainly of dried fruit and nuts. It’s up to you to make them up to suit your tastes and desires, and also according to what’s in your cupboards!
5. Banana chocolate chip mug cake
