A NATURAL GLUTEN-FREE FOOD PRODUCT

Chicory is a naturally gluten-free food and is therefore suitable for the gluten-free diet. However, it is essential to be diagnosed if you think you are gluten intolerant or allergic. You don’t want to risk depriving yourself of gluten-containing products for life, without good reason.

What is gluten?
Gluten makes up 80% of the protein in wheat. It is formed when the proteins are hydrated and kneaded. It enables dough to rise, thicken sauces, bind preparations, enhance the flavour of foods and increase the protein content.

Where is gluten found?
Gluten is found in the following cereals: wheat (all triticum species, such as wheat, einkorn, spelt and kamut), rye (and their hybrid species such as triticum), in the form of bulgur, semolina, seitan, etc., and barley (malt). This applies not only to baked goods and cakes, but also to certain soups, broths, industrial sauces and foods containing thickeners and flavour enhancers. Fortunately, ‘cereals containing gluten’ are systematically labelled in the list of ingredients of pre-packaged products, whatever the quantity.

Gluten intolerance
For some people, eating foods containing gluten attacks the villi in the intestinal wall, leading to pain, fatigue, weight loss, etc. They are victims of gluten intolerance or coeliac disease, a genetic auto-immune disease. If you think you have these symptoms, you need to be diagnosed, and above all you mustn’t stop eating gluten yourself, because then the diagnosis will no longer be possible, or it will be really complicated. You shouldn’t risk depriving yourself of gluten-containing products for the rest of your life, without good reason.

Chicory is a naturally gluten-free food and is therefore suitable for the gluten-free diet. All the products in the range – Soluble, Liquid, Ground and Granulated chicory – are suitable for gluten-free drinking. However, if you have another specific pathology, always ask your doctor or dietician for advice on whether chicory can be included in your diet.
