Chicory is used to add appetising brown colours and flavours to ice creams, cakes, cream desserts, custard-style desserts, yogurts, etc.



Baked goods, pastries and cakes

Chicory flour can used as a substitute for emulsifiers and improves the softness, machinability, performance and keeping properties of cooked, raw and precooked frozen bakery products: speciality breads, pastries, biscuits, egg-based doughs, etc. It also allows a significant reduction in the use of salt.

Ingredients that have been roasted, such as chicory granules, are used to give bakery products an appetising brown colour.
