In all of its available forms, chicory can be used to prepare a variety of recipes, offering them both flavour and originality.

HAM COOKED WITH CHICORY

QUANTITY FOR 100 PORTIONS

INGREDIENTS

Ham : 10 kg
1Lof brine per 10kg of ham
4soup spoons of chicory paste per 10kg
6soup spoons of liquid chicory per 10kg
Preparation of 1l of spicy brine
300 gof ground pepper grains
50 gof nutmeg leaves
50 gof blanched thyme, 25g of juniper berries
25 gof bay leaves
25 gof whole cloves

RECIPE

  • Bring all ingredients to the boil, filter and leave to cool.
  • Add the chicory paste.
  • Inject the brine.
  • Cooking: temperature 72°C, until the centre of the ham reaches 68°C.
  • Cooking control: prick the centre of the ham with a thermometer probe.
