In all of its available forms, chicory can be used to prepare a variety of recipes, offering them both flavour and originality.

COCOA CREAM

QUANTITY FOR 100 PORTIONS

INGREDIENTS

Cocoa: 125 g
Vanilla: 1 tige
Alcohol at 90°C: 1 l
Sugar: 1,250 kg
Water: 7 dl
55% chicory paste: 2 soup spoons

RECIPE

  • Reduce the cocoa beans into small pieces.
  • Place the 90° alcohol, the chicory paste and the vanilla bean in a closed airtight container.
  • Set aside in a cool place for approximately 14 days.
  • After the 14th day, filter the preparation.
  • Melt the sugar in 7dl of water.
  • Mix the two preparations together and pour into hermetically sealable bottles.
  • Wait 2 months before consuming.
