CHOUX PASTRY

QUANTITY FOR 100 PORTIONS

INGREDIENTS

Water: 1 l
Butter: 0,5 kg
Salt: 0,025 kg
Sugar: 0,05 kg
Flour: 0,8 kg
Eggs: 20

RECIPE

  • Heat the water, butter, salt and sugar.
  • Sprinkle over the flour and dry over a low heat.
  • Remove from heat and add the eggs two by two.
  • Pipe onto a pastry tray and bake for 7 minutes at 250°C, then continue baking at 200°C until dry and cooked.
