In all of its available forms, chicory can be used to prepare a variety of recipes, offering them both flavour and originality.

CHICORY FLAN WITH SPECULOOS CINNAMON BISCUIT

QUANTITY FOR 100 PORTIONS

INGREDIENTS

Liquid chicory: 0,25 l
Fine granulated sugar: 2 kg
Cornflour: 0,2 kg
Eggs: 36
Milk: 12 l
Speculoos cinnamon biscuits: 100

RECIPE

  • Heat the milk.
  • Prepare a cream with the eggs, sugar, cornflour and liquid chicory.
  • Add this mixture to the milk.
  • Pour into ramekin dishes.
  • Bake in a bain-marie at 150°C for 40-45 minutes.
  • Cool in a cooling chamber.
  • Serve chilled, garnished with a speculoos biscuit.
