In all of its available forms, chicory can be used to prepare a variety of recipes, offering them both flavour and originality.

AVOCADO AND ORANGE CRISP WITH CHICORY SAUCE

QUANTITY FOR 100 PORTIONS

INGREDIENTS

Sheets of brik pastry: 50 Avocados: 30
Oranges: 25 Lettuces: 6
Tomatoes: 15 Sunflower oil: 0,5 l
Lemon juice: 0,5 l Liquid chicory: 0,2 l
Salt, pepperto taste

RECIPE

  • Cut out two circles in each sheet of brik pastry.
  • Bake in the oven on an overturned ramekin dish to give them a hollow shape.
  • Peel and dice the avocados, then baste with lemon juice.
  • Remove the tomato seeds and stalk, then dice.
  • Peel and dice the oranges.
  • Mix the avocados, oranges and tomatoes and season to taste.
  • Fill the pastry circles with this mixture.
  • Prepare the vinaigrette with the oil, lemon juice and chicory.
  • Arrange the crisps on a lettuce leaf and season with the vinaigrette.
