Drying

Every year, thousands of tonnes of chicory root are transported to the drying plant located in Vieille-Eglise (in northern France, in the Nord-Pas-de-Calais region) where this raw material is processed over a 3-month drying campaign. Harvesting and storage methods, together with the progressive (over several hours) drying process preserve the plant's nutriments, in particular its inulin content.
